Wire roasting racks have always seemed fussy and such a pain to clean, so I don’t use them. I just put a few sticks of celery underneath to keep the bird off the bottom of the pan. Not only is this waaay more convenient, but it adds loads of flavour to the drippings. Celery is my favourite, but try it with onions, carrots, leeks….anything delicious and bulky. You will have the best gravy ever!
